Transforming olives into oil is not only a question of technique but also of tradition and passion. At our mill, the transformation still takes place through a traditional system, that is by cold grinding and pressure, which is why the oil obtained is unique in all its aspects.
Among all the oils used at the table, extra virgin olive oil is the basis of the Mediterranean diet (recognized by UNESCO as good of humanity) thanks to its healthy virtues, it is considered the most suitable for human nutrition as a condiment with the best balance of fats. A high quality extra virgin olive oil is rich in monounsaturated fats and low in saturated fats (the latter being responsible for the increase in cholesterol levels) and with a high level of Polyphenols, powerful natural antioxidants. Polyphenols are responsible for the bitter and spicy taste of extra virgin olive oil.
